- 3 large eggs
- 1/4 cup milk
- 1 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil or butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh herbs (optional, e.g. parsley or dill)
Instructions:
- Prepare the Egg Mixture:
In a bowl, whisk the eggs with milk, salt, and pepper until well combined. - Cook the Spinach:
Heat olive oil or butter in a non-stick skillet over medium heat.
Add the chopped spinach and cook for 1–2 minutes until wilted. - Add the Eggs:
Pour the egg mixture over the spinach. Cook gently without stirring, letting the eggs set around the edges. - Add Feta Cheese:
Sprinkle crumbled feta cheese evenly over the omelette. Cover and cook for another 1–2 minutes, or until the eggs are mostly set but slightly creamy on top. - Finish & Serve:
Fold the omelette in half, slide onto a plate, and garnish with fresh herbs if desired. Serve hot.
