Chickpea Salad Recipe

Ingredients

  • 1 can chickpeas (400g), drained and rinsed
  • 1 medium cucumber, diced
  • 1 large tomato, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin (optional)

Instructions

  1. Combine Ingredients:
    In a large bowl, add chickpeas, cucumber, tomato, red onion, and parsley.
  2. Dress the Salad:
    Drizzle with olive oil and lemon juice. Sprinkle with salt, black pepper, and cumin if using.
  3. Toss and Serve:
    Toss gently to combine. Serve immediately or chill for 30 minutes for best flavor.
