Stuffed Peppers Recipe

Ingredients

  • 4 large bell peppers (any color)
  • 250g ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (400g)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Peppers:
    Preheat oven to 180°C (350°F). Cut the tops off the bell peppers and remove the seeds. Place peppers upright in a baking dish.
  2. Cook the Filling:
    In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft. Add ground beef and cook until browned. Stir in cooked rice, diced tomatoes, oregano, salt, and pepper. Cook for 3–4 minutes until heated through.
  3. Stuff the Peppers:
    Spoon the filling into each pepper. Top with shredded cheese.
  4. Bake:
    Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is melted and peppers are tender.
  5. Serve:
    Serve hot, garnished with fresh herbs if desired.
