Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup chickpeas, rinsed
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Assemble the Bowl: In a large serving bowl, layer the cooked quinoa, cherry tomatoes, cucumber, chickpeas, and crumbled feta cheese.
  2. Add the Dressing: Drizzle olive oil and lemon juice over the ingredients. Sprinkle with salt and black pepper to taste.
