- 2 cups broccoli florets
- 1 cup baby carrots
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat Oven: Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Prepare Vegetables: Place broccoli, carrots, bell pepper, and zucchini in a large bowl. Drizzle with olive oil and sprinkle with thyme, oregano, salt, and pepper. Toss well to coat evenly.
- Arrange and Roast: Spread the vegetables in a single layer on the prepared baking sheet. Roast for 20–25 minutes, stirring halfway, until the veggies are golden and tender.
