Lentil Spinach Stew Recipe

Ingredients

  • 1 cup dried lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 2 cups fresh spinach, chopped
  • 1 can diced tomatoes (400g)
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Lemon wedges, for serving

Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and garlic. Cook for 4–5 minutes until soft.
  2. Add Lentils and Liquids: Stir in lentils, diced tomatoes, cumin, paprika, salt, black pepper, and vegetable broth. Bring to a boil.
  3. Simmer: Reduce heat and simmer uncovered for 25–30 minutes, or until lentils are tender.
  4. Add Spinach: Stir in the chopped spinach and cook for another 2–3 minutes until wilted.
  5. Serve: Taste and adjust seasoning. Serve hot with lemon wedges for a bright finish.
