Avocado Toast with Poached Egg Recipe

Ingredients:

  • 2 slices whole-grain bread, toasted
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon white vinegar (for poaching)
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Fresh herbs for garnish (optional, e.g. chives or parsley)
  • Lemon wedge (optional)

Instructions:

  1. Prepare the Avocado:
    Peel and mash the avocado in a bowl. Add a squeeze of lemon juice, salt, and pepper. Mix well.
  2. Poach the Eggs:
    Fill a saucepan with about 2 inches of water and bring to a gentle simmer. Add vinegar.
    Crack each egg into a small bowl. Create a gentle whirlpool in the water and gently slide one egg in. Cook for 3–4 minutes until the white is set and the yolk is still soft. Repeat for the second egg.
  3. Assemble the Toast:
    Spread the mashed avocado evenly over the toasted bread slices.
  4. Add the Eggs:
    Place a poached egg on each slice of toast. Sprinkle with black pepper, red pepper flakes, and fresh herbs if desired.
  5. Serve:
    Serve immediately, with extra lemon wedges on the side.
