Eggplant Parmesan Recipe

Ingredients

  • 2 medium eggplants, sliced into rounds
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil for frying

Instructions

  1. Prep Eggplant: Salt eggplant slices and let sit for 20 minutes to draw out moisture. Pat dry with paper towels.
  2. Bread the Slices: Coat each slice in flour, then dip in beaten eggs, then coat with breadcrumbs.
  3. Fry: Heat olive oil in a large skillet over medium heat. Fry eggplant slices until golden brown on both sides, then drain on paper towels.
  4. Assemble: In a baking dish, spread a layer of marinara sauce. Layer fried eggplant slices, more sauce, mozzarella, and parmesan. Repeat layers as needed. Top with dried basil.
  5. Bake: Bake at 190°C (375°F) for 25–30 minutes, until cheese is bubbly and golden.
  6. Serve: Let cool slightly before serving. Enjoy hot with fresh basil or pasta on the side.
