Ingredients
- 2 medium eggplants, sliced into rounds
- 1 cup flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil for frying
Instructions
- Prep Eggplant: Salt eggplant slices and let sit for 20 minutes to draw out moisture. Pat dry with paper towels.
- Bread the Slices: Coat each slice in flour, then dip in beaten eggs, then coat with breadcrumbs.
- Fry: Heat olive oil in a large skillet over medium heat. Fry eggplant slices until golden brown on both sides, then drain on paper towels.
- Assemble: In a baking dish, spread a layer of marinara sauce. Layer fried eggplant slices, more sauce, mozzarella, and parmesan. Repeat layers as needed. Top with dried basil.
- Bake: Bake at 190°C (375°F) for 25–30 minutes, until cheese is bubbly and golden.
- Serve: Let cool slightly before serving. Enjoy hot with fresh basil or pasta on the side.
