Fluffy Banana Pancakes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large ripe banana, mashed
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract

Instructions:

  1. Mix Dry Ingredients:
    In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Mix Wet Ingredients:
    In another bowl, mash the banana well. Add the milk, egg, melted butter, and vanilla extract. Whisk until smooth and combined.
  3. Combine:
    Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter will be slightly lumpy—do not overmix, or pancakes will be dense.
  4. Cook the Pancakes:
    Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter or oil.
    Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set (about 2 minutes). Flip and cook the other side until golden brown.
  5. Serve:
    Serve warm, topped with extra banana slices, a drizzle of honey or maple syrup, and a sprinkle of nuts if desired.
