- 1 large ripe banana, mashed

- Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, and salt. - Mix Wet Ingredients:
In another bowl, mash the banana well. Add the milk, egg, melted butter, and vanilla extract. Whisk until smooth and combined. - Combine:
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter will be slightly lumpy—do not overmix, or pancakes will be dense. - Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter or oil.
Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set (about 2 minutes). Flip and cook the other side until golden brown. - Serve:
Serve warm, topped with extra banana slices, a drizzle of honey or maple syrup, and a sprinkle of nuts if desired.
