Roasted Veggies Recipe

Ingredients

  • 2 cups broccoli florets
  • 1 cup baby carrots
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Prepare Vegetables: Place broccoli, carrots, bell pepper, and zucchini in a large bowl. Drizzle with olive oil and sprinkle with thyme, oregano, salt, and pepper. Toss well to coat evenly.
  3. Arrange and Roast: Spread the vegetables in a single layer on the prepared baking sheet. Roast for 20–25 minutes, stirring halfway, until the veggies are golden and tender.
  4. Serve: Transfer to a serving dish and enjoy hot as a healthy side or light main course.
