Spinach & Feta Omelette Recipe

Ingredients:

  • 3 large eggs
  • 1/4 cup milk
  • 1 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon olive oil or butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh herbs (optional, e.g. parsley or dill)

Instructions:

  1. Prepare the Egg Mixture:
    In a bowl, whisk the eggs with milk, salt, and pepper until well combined.
  2. Cook the Spinach:
    Heat olive oil or butter in a non-stick skillet over medium heat.
    Add the chopped spinach and cook for 1–2 minutes until wilted.
  3. Add the Eggs:
    Pour the egg mixture over the spinach. Cook gently without stirring, letting the eggs set around the edges.
  4. Add Feta Cheese:
    Sprinkle crumbled feta cheese evenly over the omelette. Cover and cook for another 1–2 minutes, or until the eggs are mostly set but slightly creamy on top.
  5. Finish & Serve:
    Fold the omelette in half, slide onto a plate, and garnish with fresh herbs if desired. Serve hot.
