Sweet Potato Breakfast Hash Recipe

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs (optional, for topping)
  • Fresh parsley, for garnish

Instructions

  1. Cook the Sweet Potatoes:
    Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 8–10 minutes, stirring occasionally, until they start to soften.
  2. Add the Veggies:
    Add onion, red bell pepper, green bell pepper, and garlic to the skillet. Season with paprika, salt, and black pepper. Cook for another 6–8 minutes, stirring, until the vegetables are tender and the sweet potatoes are golden.
  3. Add the Eggs (Optional):
    Make two small wells in the hash. Crack an egg into each well. Cover the skillet and cook until the eggs are done to your liking.
  4. Serve:
    Garnish with fresh parsley and serve hot, straight from the skillet.
