Vegetable Breakfast Burrito Recipe

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup bell pepper, diced
  • 1/2 cup tomato, diced
  • 1/2 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Salsa or hot sauce for serving (optional)

Instructions

  1. Prepare the Veggies:
    Heat olive oil in a skillet over medium heat. Add onion and bell pepper. Cook for 2–3 minutes until softened. Add tomato and spinach and cook another 1–2 minutes until spinach is wilted.
  2. Scramble the Eggs:
    In a bowl, whisk the eggs with milk, salt, and pepper. Pour the eggs over the veggies in the skillet. Cook gently, stirring, until eggs are just set.
  3. Assemble the Burritos:
    Warm the tortillas. Divide the egg and veggie mixture between the tortillas. Sprinkle with cheese.
  4. Roll and Serve:
    Fold the sides in, then roll up the tortillas to enclose the filling. Serve immediately with salsa or hot sauce if desired.
